This is such a great way of drilling into such an important topic! I always tell my students to only practice at the tempo they know they can't possibly screw up at. My personal "bump up" that I find works best for me is 5 BPM at a time, and a trick I like to use is to play (and count out loud) any lick or project section a minimum of 30 times in a row before I test out a higher BPM. :-)
Funny side topic I know you and any other teacher will understand - sometimes I let the student choose their own tempo with a metronome in the lesson, and I always inevitably find myself saying "Slower. Slower than that. SLOWER. Take it down by at least 15 BPM..." :-P
